white choc cup cakes
will need: frosting:
130g plain flour 400g icing sugar
150g caster sugar 120g butter, unsalted
50g butter, unsalted few drops of vanilla
1.5 tsp baking powder
pinch of salt also one giant bar of white chocolate!
130ml whole milk
vanilla essence
1 egg
preheat oven to gas mark 3 so it is nice and hot when your cupcakes are ready to go in. I would grate your chocolate ahead of getting started just so its ready when you come to it. I like to lay everything out before I get started, saves rushing around looking for it mid recipe. So, grate 12 cubes of white chocolate to pop into the cases later on. Grate a further 12 for the icing and keep separate. Grate the remainder of chocolate for decoration. By grating the white chocolate you are keeping all of the flavour!
sieve the dry ingredients into a bowl and mix together,
add the butter until the mixture becomes like fine grainy sand.
add half the milk and vanilla, mix till paste like,
mix the egg with the remaining milk be careful not to overmix.
split between 12 cupcake cases in a muffin tin,
fill each case with equal amounts of the grated chocolate.
mix into the batter,
bake for 20 minutes until golden & springy!
combine the butter sugar and milk gradually and whisk with an electric hand mixer
for at least 4 minutes, just to make it into a stiff mixture, almost like a stiff peak.
Mix in the 12 grated cubes of chocolate with a handwhisk,
I palleted my frosting on but you could also use a piping bag,
add remainder of chocolate to decorate.
